Vegetarians will love this recipe. It also goes well with meat and fish. The taste is unique!
Ingredients:
- 1/2 cup unsalted butter
- 1 tablespoon grated fresh ginger
- 1 1/4 teaspoons ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 tablespoon brown sugar
- 1 teaspoon fine salt
- 2 cups Basmati or other long grain white rice
- 3 cups water
- 1/3 cup chopped walnuts (optional)
- 1/3 cup sliced spring onions (optional)
Method of preparation:
In a large saucepan or pot, melt the unsalted butter over medium heat.
Add the finely grated fresh ginger, ground turmeric and cayenne pepper to the melted butter. Cook for about 1 minute, stirring constantly, until fragrant.
Stir in the brown sugar and fine salt until dissolved and mix well with the butter and spices.
Add the basmati rice to the saucepan and stir to coat the rice evenly with the spiced butter mixture.
Pour in the water and bring to the boil over a high heat.
Once boiling, reduce the heat to low, cover with a tight fitting lid and simmer for 15-20 minutes or until the rice is tender and the liquid has been absorbed.
Remove the pan from the heat and leave covered for a further 5 minutes to allow the rice to steam.
Fluff up the cooked rice with a fork and transfer to a serving dish.
If desired, sprinkle the chopped walnuts and sliced spring onions over the rice before serving.
