Wegan baked oatmeal with pecans

Ingredients

  • Banana – 2 pieces
  • Cinnamon – 1 teaspoon
  • Almond milk – 460 g
  • Olive oil – 2 tablespoons
  • Pecans – 150 g
  • Oats – 220 g
  • Baking powder – 1 teaspoon
  • Flaxseed, whole – 1 tablespoon
  • Salt – a pinch
  • Maple syrup – 80 g
  • Raspberry – 70 g
  • Strawberry – 70 g

Preparation

Combine oats in a bowl with salt, baking powder, and cinnamon. Add pecans, crushed by hand, and flaxseed. Pour in almond milk and add maple syrup. Mix well. Add sliced bananas and mix again.

Transfer the mixture to an oiled baking dish. Smooth the top and decorate with pecans. Bake for about 40 minutes in an oven preheated to 200°C (390°F) until the top is golden. Top the baked oatmeal with fresh seasonal fruits, such as raspberries or strawberries.
