Udon Noodles with Tsushima

The life of a samurai is full of dangers and requires constant focus. Sharpen your senses with this sharp dish, so that when you embody a warrior from the Japanese island of Tsushima, you can fight your enemies even more effectively.

Ingredients

  • Udon noodles – 200 g
  • Chicken breast – 300 g
  • Onion – 1
  • Garlic cloves – 2
  • Oil – 2 tablespoons
  • Red curry paste – 2 tablespoons
  • Red chili pepper – 1
  • Carrot – 1
  • Broccoli – 0.5
  • Red bell pepper – 0.5
  • Coconut milk – 200 ml
  • Fish sauce – 2 tablespoons

Instructions

  1. Sauté the Chicken: Cut the chicken breast into smaller pieces. Heat oil in a wok and sauté the meat for about 3-4 minutes, being careful not to brown it. Remove the cooked chicken from the pan and set aside.
  2. Sauté the Spices: Finely chop the chili pepper. Also, chop the onion and garlic, then briefly sauté them in the wok until the onion is translucent and the garlic doesn’t burn. Then add the curry paste and finely chopped chili pepper to the pan. Sauté for about 2 minutes, stirring constantly.
  3. Sauté the Chicken with Vegetables: Cut the carrot and bell pepper into thin strips (julienne). Divide the broccoli into small florets. Add these prepared vegetables, along with the chicken, to the wok and sauté for about 3-4 minutes.
  4. Prepare the Sauce: To the sautéed ingredients, add the coconut milk and fish sauce. Mix everything well and cook for about 2-3 minutes. Then season the sauce with salt and pepper to taste.Tip: If you don’t like fish sauce, you can skip it.
  5. Serve the Dish: Add the precooked udon noodles to the prepared sauce. Mix everything well, transfer to a plate, and garnish with chopped cilantro or parsley.
