Turkey Lavash Wraps

This recipe is a celebration of vibrant Mediterranean ingredients wrapped up in a deliciously light and satisfying meal. Perfect for a quick lunch, picnic or healthy snack, these wraps are as nutritious as they are flavourful.

Ingredients:

  • 1 scallion, thinly sliced
  • 4 oz. crumbled goat cheese
  • 4 oz. plain Greek whole milk yogurt
  • 3 tbsp extra virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 4 cups loosely packed arugula
  • 1/2 cup fresh dill, coarsely chopped
  • 1 teaspoon fresh lemon juice
  • 4 store bought or homemade lavash
  • 1/2 lb. sliced deli turkey, chopped
  • 4 roasted red peppers, thinly sliced, divided (about 1 cup)
  • 4 Persian (or 2 English) cucumbers, quartered lengthways, halved

Method of cooking:

In a medium bowl, combine the spring onion, goat cheese, yogurt and 2 teaspoons of the olive oil.

Season to taste with kosher salt and freshly ground black pepper.

Make the arugula and dill salad:

In a large bowl, toss the arugula and dill with the fresh lemon juice and remaining 1 tsp olive oil.

Place the lavash on a flat surface.

Spread the goat cheese mixture evenly over the lavash, leaving a 1cm border on all sides.

Divide the turkey, red pepper, cucumber and rucola salad among the lavash.

Fold one half of the lavash over the filling like a burrito, then roll tightly to enclose.

Tuck the ends in to seal the wrap.

Cut the wraps in half before serving. Enjoy fresh for the best flavour!
