Baked Yoghurt

Baked Yoghurt Custard Toast is a delicious twist on traditional French toast. It features creamy Greek yoghurt and custard baked on thick slices of bread. The dish is sweetened with honey and enhanced with vanilla and lemon zest.


  • 2 tablespoons soft unsalted butter
  • 4 large thick slices of french bread
  • 1/2 cup + 2 tablespoons greek yoghurt
  • 1 tablespoon honey
  • 1/4 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 large egg
  • 1/4 tsp kosher salt
  • fruit topping (optional)
  • 1 cup blueberries
  • 1 cup quartered strawberries
  • 1/3 cup maple syrup
  • 1 teaspoon fresh lemon juice

Method of preparation:

Preheat the oven to 175°C (350°F).

Spread the soft unsalted butter evenly on one side of each slice of French bread.

In a bowl, whisk together the Greek yoghurt, honey, vanilla extract, lemon zest, egg and kosher salt until smooth.

Place the buttered slices of bread on a baking tray, buttered side up.

Spoon the yoghurt mixture over the bread, spreading to cover the surface.

Bake in the preheated oven for about 15-20 minutes, or until the custard has set and the edges of the bread are golden brown.

While the toast is baking, prepare the fruit topping by combining the blueberries, strawberries, maple syrup and lemon juice in a bowl.

When the toast is done, allow it to cool slightly and then top with the fruit mixture.
