Snails with puff pastry, cheese, and herbs

A delicious snack straight from English tables.

Ingredients

Puff Pastry:

  • 250 g flour
  • 1 tablespoon baking powder
  • 100 g cold butter
  • milk

Filling:

  • 40 g goat cheese or Brie, Camembert
  • 40 g grated Parmesan or hard cheese
  • 40 g grated yellow cheese
  • 2 tablespoons chopped parsley
  • 1 teaspoon thyme leaves or dried thyme

Preparation

Preheat the oven to 220 degrees Celsius. Line a baking sheet with parchment paper. Sift the flour into a bowl along with the baking powder and salt. Add finely chopped cold butter and rub it into the flour with your fingers or mix it with a mixer until it resembles breadcrumbs. Gradually add milk (one tablespoon at a time, as much as needed) and mix the dough with a knife to combine the ingredients.

Transfer the dough onto a floured work surface and roll it out with a floured rolling pin into a rectangle measuring 20 x 25 cm. Sprinkle with chopped goat cheese or Brie, followed by Parmesan and yellow cheese, and finally with parsley and thyme. Starting from the longer side, roll up the dough into a log. Cut into 2 cm pieces and arrange them on the prepared baking sheet with 2 cm spacing. Bake for 12 minutes. Transfer to a wire rack and serve hot or warm.
