Slutty Vegan's One Night Stand Burger

The burger is topped with a spicy chipotle mayo sauce made with vegan mayonnaise, lime juice and chipotle chili powder for a tangy, slightly hot kick. Served on a soft and slightly sweet vegan Hawaiian bun and topped with fresh lettuce and tomato, this burger is a feast for the senses.

Ingredients:

For the sauce:

  • 3 tablespoons vegan mayonnaise
  • 1 large squeeze of lime juice
  • 1/4 teaspoon chipotle chilli powder

For the burgers:

  • 2 tablespoons extra virgin olive oil, divided
  • 1 red onion, thinly sliced
  • 1 plant-based patty (preferably Impossible Burger)
  • 1 vegan Hawaiian roll, toasted
  • 1 slice of vegan cheese
  • 2 slices vegan bacon, cooked
  • Head of lettuce
  • Tomato, sliced

Method of cooking:

In a small bowl, whisk together the vegan mayonnaise, lime juice and chipotle chilli powder until well combined. Set aside.

Heat 1 tablespoon extra virgin olive oil in a frying pan over medium heat.

Add the thinly sliced red onion and cook, stirring occasionally, until the onion is caramelised and golden brown, about 15 minutes. Remove from the heat and set to one side.

In the same frying pan, heat the remaining 1 tbsp extra virgin olive oil over a medium heat.

Cook the veggie patties according to the package instructions, usually about 3-4 minutes per side, until browned and heated through.

During the last minute of cooking, place the slice of vegan cheese on top of the patty and cover the pan to allow the cheese to melt.

Spread both halves of the toasted vegan Hawaiian bun with the prepared chipotle mayo sauce.

Place a leaf of lettuce on the bottom bun.

Place a slice of tomato on top of the lettuce.

Place the cooked plant-based patty with melted vegan cheese on top of the tomato.

Place the caramelised onions on top of the patty.

Top with the cooked vegan bacon slices.

Cover with the top half of the bun.
