- Puff pastry
- Shallots – 400 g
- Brown sugar – 40 g
- Balsamic vinegar – 40 g
- Butter – 45 g
- Olive oil – 3 tablespoons
- Blue cheese – 50 g
- Salt – a pinch
- Black pepper – a pinch
- Dried dill – 1 teaspoon
Preparation
Step 1: Sautéing the Shallots Peel and halve the shallots. Heat olive oil with butter in a cast-iron skillet. Add the shallots and sauté for 5 minutes over medium heat. Then add sugar, vinegar, salt, and pepper. Sauté everything for another 5 minutes. Afterward, turn the shallots and simmer over low heat until the sauce thickens.
Step 2: Baking the Tarte Arrange the shallots evenly in the skillet and sprinkle them with blue cheese. Cover everything with puff pastry, folding the edges neatly. Make a small incision (a cross) in the center to allow steam to escape. Bake for 20-25 minutes or until the pastry turns golden.
Step 3: Transferring the Tarte to a Plate Remove the tarte from the oven and let it cool slightly. Then cover it with a plate and, with a swift motion, flip it over onto the plate. Sprinkle with chopped dill.
