Rice pudding is a classic comfort food that’s loved by many. It’s warm, creamy and has a delicious texture that’s sure to put a smile on your face. Although this recipe is delicious as is, you can make it your own. You can add raisins, cinnamon, vanilla extract or any other ingredient you like to your rice pudding.
Ingredients:
- 100g pudding rice
- butter, for the dish
- 50g sugar
- 700ml semi-skimmed milk
- pinch of grated nutmeg or strip of lemon zest
- 1 bay leaf or strip of lemon zest
Method of preparation:
Preheat the oven: Preheat the oven to 150C/130C fan/gas 2.
Prepare the dish: Grease an 850ml ovenproof dish with butter, then pour in the rice and sugar and stir in the milk. Sprinkle with the nutmeg and top with the bay leaf or lemon zest.
Cook the pudding: Cook for 2 hours, stirring after 30 minutes and again after 1 hour, then top with a knob of butter and bake for a further 30 minutes until golden brown on top.
Serve: Serve hot from the oven. If you like, you can remove the bay leaf or lemon zest before serving.
