Quick Sponge Cake with Frozen Strawberries

  • All-purpose flour: 3 cups
  • Sugar: 1 cup
  • Baking powder: 2 teaspoons
  • Eggs: 5
  • Oil: 3/4 cup
  • Vanilla extract: 1 teaspoon
  • Orange zest: 1 teaspoon


  • All-purpose flour: 1 cup
  • Margarine: 1/2 stick
  • Powdered sugar: 1/2 cup


  • Frozen strawberries: 600 grams
  • Powdered sugar (for dusting)
  • Breadcrumbs


  1. Cake Batter:
    • In a mixing bowl, beat the eggs with the sugar until light and fluffy.
    • Gradually add the oil and vanilla extract, continuing to mix.
    • In a separate bowl, sift together the all-purpose flour, baking powder, and orange zest.
    • Gently fold the dry ingredients into the egg mixture until just combined.
  2. Preparing the Pan:
    • Line a 30×40 cm baking pan with parchment paper.
    • Pour the batter into the prepared pan and spread it evenly.
    • Lightly sprinkle breadcrumbs over the batter.
  3. Adding Strawberries:
    • Distribute the frozen strawberries evenly over the batter.
  4. Crumble Topping:
    • Combine the flour, margarine, and powdered sugar using your fingertips until the mixture resembles coarse crumbs.
    • Sprinkle the crumble mixture over the strawberries.
  5. Baking:
    • Preheat the oven to 180°C (350°F).
    • Bake the cake for about 1 hour, or until a toothpick inserted into the center comes out clean.
  6. Finishing:
    • Allow the cake to cool completely.
    • Before serving, dust the top with powdered sugar.
