Perfect Whole Roasted Beets

Ingredients:

  • 4 medium beets (red or golden), thoroughly washed
  • 2 tsp. extra-virgin olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Method of preparation:

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Trim any greens from the beets and scrub them clean.

Leave the beets whole with the skin on.

Place the beets on a baking sheet.

Drizzle with olive oil and sprinkle with salt and black pepper.

Toss the beets until they are evenly coated with the oil and seasonings.

Roast in the preheated oven for about 35 to 40 minutes.

Halfway through, turn the beets to ensure even roasting.

The beets are done when they are tender and can be pierced through with a fork with light pressure.

Remove the beets from the oven and let them cool until they can be handled.

The skins should slip off easily; you can use a paper towel to help rub them off.

The beets can be served whole or sliced to your preference.
