Mint & Coriander Tomato Tarts

The combination of mint and coriander gives these tarts a fresh and vibrant flavour that’s truly unique. The tomatoes add a sweet and tangy flavour that complements the herbs perfectly. They can be served as a starter, side dish or even as a light main course. They’re perfect for dinner parties, picnics or just a casual meal at home.

Ingredients:

  • 500g packet of ready-made puff pastry
  • 2 tbsp fresh mint, finely chopped
  • 2 tablespoons chopped fresh coriander
  • 1 small clove of garlic, crushed
  • 6 tablespoons olive oil
  • pinch of cayenne pepper
  • 6 large plum tomatoes

Method of preparation:

Preheat the oven to 200C/180C fan/gas 6.

Roll out the puff pastry and cut into six equal squares. Place the squares on a baking tray lined with greaseproof paper.

In a bowl, mix together the chopped mint, chopped coriander, crushed garlic, olive oil and cayenne pepper. This will be your herb oil.

Slice the plum tomatoes thinly and arrange on top of the puff pastry squares.

Drizzle the herb oil over the tomatoes.

Bake in the preheated oven for about 15-20 minutes, or until the pastry is golden and the tomatoes are cooked.
