Mini Pizzas with Feta and Olives

Ingredients

Dough

  • Sugar – 0.5 teaspoon
  • Fresh yeast – 21 g
  • Olive oil – 4 tablespoons
  • Salt – 0.25 teaspoon
  • Wheat flour – 300 g

Toppings

  • Black pepper – 1 pinch
  • Green olives – 100 g
  • Dried oregano – 0.25 teaspoon
  • Orange – 1 piece
  • Feta cheese – 125 g
  • Salt – 0.25 teaspoon
  • Heavy cream (30%) – 200 g
  • Pine nuts – 30 g
  • Radicchio – 50 g

Preparation

Crumble the yeast and mix with the sugar in 150 ml of lukewarm water. Cover and let rise for 15 minutes. Knead the flour, salt, and olive oil with the yeast mixture into a smooth dough. Leave the dough covered in a warm place for about 45-60 minutes to rise.

Drain and halve the olives. Drain and cube the feta. Scald the orange with hot water. Grate the zest and mix with the cream and oregano. Season with salt and pepper. Peel the orange thickly, removing the white inner skin as well. Cut out the flesh from between the membranes and chop it into pieces. Clean the radicchio, wash, shake dry, and remove the core. Cut the leaves into thin strips.

Divide the dough into 6 portions and roll out on a bit of flour into oval disks (about 25 x 10 cm). Place on two baking sheets lined with parchment paper and spread with the cream mixture. Sprinkle with olives, feta, and pine nuts. Bake the pizzas one at a time in a preheated oven at 230°C for about 15 minutes. Before serving, top the mini pizzas with orange pieces and radicchio strips.
