Indian ice cream like no other. Well, unless you go to India. Anyway, it will be much easier to prepare it in your own kitchen.
Ingredients
- Milk powder – 3 cups
- Pistachios – 1/3 cup
- Heavy cream (30%) – 400 ml
- Milk – 1-2 cups
- Saffron Threads – 1/2 teaspoon
- Ground Cardamom – 1/2 teaspoon
- Powdered sugar – 1/4 cup
Preparation
- In a saucepan, combine the milk powder and heavy cream. While stirring continuously, pour in the milk. The mixture should have a slightly looser consistency than cream (the absorption of milk powder varies, but from experience, I know it absorbs differently), season with saffron, cardamom, and powdered sugar. Cook the mixture over very low heat until it slightly thickens. Remove from heat and add the pistachios.
- Pour the cooled mixture into an ice cream maker and churn until it noticeably freezes. Before serving, sprinkle with chopped pistachios.
