Greek Chicken Sliders

These chicken sliders are a harmonious blend of aromatic herbs and spices, tender chicken and the tangy flavour of feta and olives. They’re not just sliders, they’re your ticket to an Aegean adventure, all from the comfort of your own home. Get ready to savour the spirit of Greece in every bite!

Ingredients:

  • 2lb of ground chicken
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 teaspoon onion powder
  • 1 tsp garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 12 soft slider rolls
  • roasted red pepper hummus
  • 4oz crumbled feta cheese
  • banana pepper slices (see note below)
  • pitted kalamata olives, chopped
  • 1 cup baby spinach leaves
  • 12 tomato slices (roma tomatoes recommended)

Method of preparation:

In a bowl, mix the ground chicken with the dried oregano, dried parsley, onion powder, garlic powder, salt and black pepper.

Shape the mixture into 12 small patties.

Heat the olive oil in a large frying pan over medium heat.

Cook the patties for about 3-4 minutes on each side or until cooked through.

Slice the slider buns in half and spread a generous amount of roasted red pepper hummus on the bottom halves.

Place a chicken patty on each bun, followed by crumbled feta cheese, banana pepper slices, chopped kalamata olives, a few baby spinach leaves and a tomato slice.

Top with the top halves of the slider buns.

If you prefer a milder taste, you can reduce the amount of banana peppers or substitute a less hot pepper.
