Gingerbread Cake with Apples

Moist cake with grated apples, cinnamon, and a blend of aromatic spices.

Ingredients

  • 125 ml natural yogurt
  • 2 eggs
  • 125 ml vegetable oil
  • 16 g vanilla sugar
  • 150 g sugar
  • 250 g all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon ground cinnamon
  • 20 g gingerbread spice mix
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 apples (1.5 cups grated)

Topping

  • 2/3 cup peeled walnuts
  • 2 tablespoons cane sugar or regular sugar
  • 1 teaspoon cinnamon

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Line a small loaf pan (11 x 25 cm) with parchment paper.
  2. In a bowl, combine yogurt, eggs, vegetable oil, vanilla sugar, and sugar. Mix with a whisk until well combined.
  3. In another bowl, sift together flour, cocoa powder, cinnamon, gingerbread spice mix, baking powder, and baking soda. Mix well.
  4. Peel and grate the apples using a coarse grater. You should have approximately 1.5 cups.
  5. Combine all ingredients: wet ingredients, dry ingredients, and grated apples. Stir slowly with a spoon until just combined (do not overmix!).
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Sprinkle the top with roughly chopped walnuts, followed by cane sugar and cinnamon.
  8. Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
