Ingredients:
- 1/2 cup unsalted butter (softened)
- 1/3 cup canola oil
- 1 1/4 cups dark brown sugar (packaged)
- 1 teaspoon vanilla extract
- 1/2 cup molasses
- 3 large eggs
- 2 1/2 cups all purpose flour
- 2 1/2 teaspoons ground ginger
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 tsp ground cloves
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
Method of preparation:
Lightly grease a 10 to 12 cup baking pan.
In a large bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, ground cloves, baking powder, baking soda and salt.
In a separate bowl, whisk together the softened butter, rapeseed oil and dark brown sugar until fluffy. Add the eggs one at a time, beating well after each addition. Whisk in the vanilla extract and molasses.
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until smooth.
Pour the mixture into the prepared Bundt pan. Bake in the preheated oven for 45-50 minutes, or until a cake tester inserted in the centre comes out clean.
Cool the cake in the tin for 10 minutes, then invert onto a wire rack to cool completely.
