Fruit Cookie Pizza

You have the freedom to create your own Fruit Cookie Pizza with a variety of fruits to create a visually stunning dessert that’s as unique as you are. It’s a fantastic recipe to get the whole family involved. Children in particular will love arranging the fruit and adding their own personal touches.

Ingredients:

For the cookie dough:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the frosting:

  • 4 oz cream cheese, softened
  • 1 oz unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 pinch of salt
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream

For the topping:

  • 2 cups assorted fruit (berries, kiwi, mandarin oranges, etc.)
  • 2 tablespoons apricot jam
  • 1 teaspoon water

Method of preparation:

Preheat the oven to 175°C (350°F).

In a large bowl, cream the softened butter and granulated sugar until light and fluffy.

Whisk in the egg, vanilla extract and almond extract.

In a separate bowl, whisk together the flour, baking powder, baking soda and salt.

Gradually fold the dry ingredients into the wet ingredients until you have a dough.

Press the dough into a round shape on a pizza tin or baking sheet.

Bake for 10-15 minutes or until golden brown.

Leave to cool completely.

Cream the softened cream cheese and butter until smooth.

Add the icing sugar, salt and vanilla extract and whisk until creamy.

Gradually add the heavy cream and continue to beat until the frosting is light and fluffy.

Spread the frosting over the cooled base.

Arrange the fruit in a decorative pattern on top of the icing.

Heat the apricot jam and water in a small saucepan until melted and combined.

Brush the glaze over the fruit to make it shiny.

Cut the fruit biscuit pizza into wedges and serve.
