Food Babe's Fast Food Burrito

With each sprouted grain tortilla, you’re choosing a healthier alternative to traditional fast food. Black beans provide a hearty base rich in protein and fibre, while the spicy salsa and creamy goat cheese add layers of flavour that will make your taste buds dance. Optional toppings like avocado and lime bring a freshness that can brighten up any meal.

Ingredients:

  • 6 sprouted grain tortillas (small Food for Life Ezekiel)
  • 1 tin of black beans (Eden Foods, drained and rinsed)
  • 2 cups salsa (Field Day Organic or homemade)
  • 3 oz goat cheese
  • Chilli powder (to taste)
  • 1/2 onion (chopped)
  • Sour cream (optional)
  • Lime slices (optional)
  • Avocado (optional)
  • Romaine lettuce (optional)

Method of preparation:

Heat the tortillas in a dry pan or microwave until soft and pliable.

In a bowl, lightly mash the black beans with a fork and season to taste with chilli powder.

Lay out the warm tortillas and spread the bean mixture in the centre of each tortilla.

Spoon the salsa over the beans.

Sprinkle the goat’s cheese and chopped onion over the salsa.

Fold in the sides of the tortilla and roll tightly.

Serve with sour cream, lime wedges, sliced avocado and romaine lettuce if desired.
