Eton Mess

Eton mess is one of those most famous British desserts, delighting connoisseurs with its delicacy and harmonious flavors. In this charming yet incredibly tempting dessert, you’ll find just a few ingredients – juicy strawberries, whipped cream, and crispy meringue, which together create a true masterpiece of culinary art.

Ingredients

Meringue

  • Egg whites – 3 pcs.
  • Fine sugar – 100 g
  • Powdered sugar – 100 g
  • Salt – a pinch

Other Ingredients

  • Strawberries – 700 g
  • Heavy cream (36%) – 500 ml
  • Powdered sugar – 50 g
  • Fine sugar – 15 g
  • Vanilla – 1 pod

Preparation

Meringue:

Step 1: Prepare Egg White Foam Pour egg whites into the bowl of a mixer. Add a pinch of salt and beat until stiff peaks form.

Step 2: Add Fine Sugar Reduce the mixer speed and gradually add fine sugar while still mixing. The foam should thicken and become shiny after a while of beating.

Step 3: Add Powdered Sugar Towards the end of mixing, also add powdered sugar. Mix until smooth.

Step 4: Bake the Meringue Transfer the prepared meringue mixture onto a baking sheet lined with parchment paper. Spread it evenly, but it doesn’t have to be a perfect rectangle – the meringue will be crumbled anyway. Place the baking sheet in the oven. Bake for about 1.5 hours, then turn off the oven, leave the door slightly ajar, and let the meringue cool inside. After about 30 minutes, you can remove the baking sheet and let the meringue cool completely on the kitchen counter.

Step 5: Prepare the Strawberries Wash and dry all the strawberries on a colander, then remove the stems and chop them into smaller pieces (e.g., quarters). Put the strawberries in a bowl, then mix them with fine sugar. Set the bowl with the fruit aside for 15 minutes.

Step 6: Whip the Cream Pour very chilled heavy cream into a clean mixer bowl, then add a bit of powdered sugar to it. Whip until stiff peaks form, and towards the end of whipping, add the seeds scraped from the vanilla pod.

Step 7: Serve the Dessert Once the meringue has cooled and all the ingredients are properly prepared, it’s time to serve the dessert. Layer whipped cream, finely crumbled meringue, and strawberries in chosen serving dishes. If the dish is deep, you can add another layer. Serve the dessert at room temperature or slightly chilled.
