Eclair Cake - No-Bake Dessert

Simple, quick, and delicious.

Ingredients:

  • Milk: 625 ml
  • Sugar: 6 tablespoons
  • Vanilla pudding mix: 2 packages
  • Mascarpone: 500 g (chilled)
  • Graham crackers: 350 g

Frosting:

  • Cream: 80 ml (30% fat content)
  • Dark chocolate: 100 g (about 50% cocoa)

Preparation:

In a saucepan, bring 500 ml of milk to a boil. Mix the remaining 125 ml of milk with the vanilla pudding mixes. Once the milk starts boiling, add sugar and stir. Then pour in the dissolved pudding mixes and whisk vigorously. Cook for a minute, then remove from heat and transfer to a bowl.

Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and let it cool completely (e.g., on a balcony). Bring the cream to a boil for the frosting, remove from heat, add finely chopped chocolate, and stir until melted. Set aside to cool for about 15 minutes. Place the chilled mascarpone in the bowl of a mixer and beat until doubled in volume (about 1-2 minutes). Then add the cooled pudding and mix until smooth.

Line the bottom of a 20 x 30 cm dish with a layer of graham crackers. Spread half of the cream mixture over the crackers and cover with another layer of graham crackers. Spread the remaining cream mixture and top with another layer of graham crackers. Pour the cooled frosting over the top and refrigerate for about 2 hours before serving.
