Crispy Hot Honey Cauliflower Nuggets

Crispy Hot Honey Cauliflower Nuggets are a delicious, spicy and slightly sweet treat that makes a perfect starter or snack. The crunchy panko coating combined with the hot honey sauce creates a delightful contrast of textures and flavours.

Ingredients:

Cauliflower Nuggets:

  • 1 (1 1/2 lb.) head of cauliflower, cut into 2″ florets
  • 2 teaspoons kosher salt, divided
  • 2 cups panko breadcrumbs
  • 1/4 cup neutral oil (such as vegetable or canola)
  • 1 cup (120g) all purpose flour
  • 1 cup soy milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika powder
  • 1/4 tsp freshly ground black pepper

Hot honey sauce & assembly:

  • 1/2 cup honey
  • 4 tablespoons unsalted butter or vegetable butter
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika powder
  • Kosher salt, to taste
  • Flaky sea salt, to garnish

Method of cooking:

Preheat the oven to 425°F (220°C). Line a baking sheet with baking paper.

In a large bowl, toss the cauliflower florets with 1 teaspoon kosher salt. Set aside.

In a shallow bowl, mix the panko breadcrumbs and neutral oil until the panko is evenly coated. Spread the mixture on a plate.

In another bowl, whisk together the all-purpose flour, soy milk, garlic powder, paprika, black pepper and remaining 1 teaspoon kosher salt to make a batter.

Dip each cauliflower floret in the batter, allowing any excess to drip off, then roll in the panko mixture until well coated.

Place the coated florets on the prepared baking tray.

Bake in the preheated oven for 20-25 minutes or until golden brown and crisp, turning halfway through to ensure even browning.

While the cauliflower is baking, make the hot honey sauce. In a small saucepan, combine the honey, butter, cayenne pepper, garlic powder and paprika.

Cook over medium heat, stirring occasionally, until the butter is melted and the sauce is well combined. Season to taste with kosher salt.

When the cauliflower nuggets are done, remove from the oven and allow to cool slightly.

Place the nuggets in a large bowl and drizzle with the hot honey sauce, tossing gently to coat.

Arrange the hot honey cauliflower nuggets on a serving platter.

Garnish with flaky sea salt and serve immediately.
