A simplified version of the famous French crepes. A simple recipe for a delightful lunch or second breakfast.
Ingredients:
- 4 crepes
- 2 teaspoons sugar
- 1 tablespoon butter
- 1 orange
- optionally: 1 tablespoon orange liqueur
- for serving: whipped cream / yogurt / sweetened cheese / orange segments / fruits
Preparation:
- Prepare the crepes. Optionally, after frying, you can fill the crepes with cottage cheese and roll them into triangles.
- Heat a frying pan, sprinkle sugar into it, add the juice from half of the orange, and after a moment, add the butter. Mix (using a silicone spatula) and wait until the syrup begins to lightly simmer.
- Immediately place 4 crepes (folded into triangles) into the pan, reduce the heat, and sauté briefly.
- Flip the crepes to the other side. Drizzle them with orange juice and optionally sprinkle lightly with brown sugar, sauté for a while longer.
- For those interested, you can pour orange liqueur (up to 1 tablespoon) into the pan from the side and – gently tilting the pan – carefully ignite (note, the flame will be vigorous and high!)
- Serve on plates and accompany with your favorite toppings.
