Cheese Crackers

Made with a harmonious blend of cheese and almond flour, these crackers are not only delicious, but also fit into your low carb diet. Infused with the subtle aroma of rosemary and the richness of cream cheese, each bite offers a satisfying crunch.

Ingredients:

  • 2 cups cheese (mix of Parmesan-Romano, Swiss, and Cheddar)
  • 1 cup almond flour
  • 2 oz. cream cheese
  • 1 egg
  • 1/2 tsp. sea salt
  • 1 tsp. rosemary

Method of preparation:

Preheat the oven to 175°C (350°F). Line a baking sheet with greaseproof paper or silicone baking mat.

Combine the cheeses and cream cheese: In a microwave-safe bowl, combine the mixed cheeses and cream cheese. Microwave on high for 1 minute, stir and microwave for a further 30 seconds until the cheeses are fully melted and can be mixed together.

Add the dry ingredients: Stir in the almond flour, sea salt and rosemary until well combined.

Add the egg to the cheese and almond flour mixture and mix to form a dough.

Place the dough between two sheets of baking paper and roll out to the desired thickness for the crackers.

Remove the top sheet of parchment paper and cut the dough into small squares or use a cookie cutter to make shapes. Place the tray in the oven and bake for 12-15 minutes or until the edges are golden brown.

Leave to cool and enjoy: Allow the crackers to cool completely before removing them from the baking tray. They will crisp up as they cool.
