Ingredients:
- 1 cup unbleached flour
- 1 cup cornmeal
- ¼ cup white sugar
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 1 cup plain low-fat yoghurt
- 2 large eggs, beaten
Method of preparation:
Preheat the oven to 375°F (190°C). Grease or line an 8-inch square baking dish with parchment paper.
In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking soda and salt.
In another bowl, mix together the plain low-fat yoghurt and the beaten eggs.
Pour the wet ingredients into the dry and stir until just combined. Take care not to overmix.
Pour the mixture into the prepared baking tin and spread evenly.
Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the centre comes out clean.
