Coconut Granola with Strawberries

It’s best to soak the oats overnight to ensure they soften adequately by breakfast. Alternatively, you can soak them for about 1-2 hours beforehand.

Ingredients:

  • Oats: 1 cup
  • Coconut water: 1 cup + 1 tablespoon of xylitol
  • Coconut flakes: 2 tablespoons
  • Raisins: 3 tablespoons
  • Coconut milk: 5 tablespoons + extra for serving
  • Strawberries

Preparation:

Soak the oats in coconut water with xylitol, add coconut flakes and raisins, mix well, and leave overnight to soak (or for a quick version, soak for 1-2 hours). In the morning, add coconut milk, mix well, and serve with sliced strawberries and optionally additional thick coconut milk (or cream).
