Chicken Burgers with Bell Pepper and Corn

A simple recipe for burgers with a twist.

Ingredients

  • 1 double chicken breast fillet (about 450 g)
  • 2 cloves of garlic
  • 1 tablespoon oregano
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon hot paprika (or to taste)
  • 4 sprigs of parsley
  • 1 red bell pepper
  • 1/2 cup corn kernels
  • 1 egg
  • Vegetable oil for frying

Preparation

Clean the chicken fillets from membranes and dice into pieces. Process in a food processor or chop finely on a cutting board.

Transfer to a bowl, add crushed garlic and finely chopped parsley. Season with salt, pepper, oregano, and paprika powder. Mix well.

Add diced bell pepper, drained corn kernels, and egg. Mix thoroughly to combine. Shape into small patties, dipping hands in cold water to prevent sticking.

Heat a frying pan with oil and fry the burgers for about 5 minutes on each side, or until cooked through. Alternatively, coat them with oil/olive oil and cook on a dry frying pan.
