Kadai Chicken

Unleash the bold flavours of India with Kadai Chicken. This dish is a fiery blend of tender chicken and spicy tomatoes, infused with the heat of red chillies. It’s a staple that promises a punch of robust spice and a flavour that lingers.

Ingredients:

  • 5 teaspoons vegetable oil
  • 7 dried red chillies, finely chopped
  • 5 tomatoes, finely chopped
  • 4 boneless chicken breasts, cut into bite-sized pieces

Method of preparation:

Heat the vegetable oil in a kadai or wok over a medium heat.

Add the dried red chillies to the oil and sauté for a few seconds until they begin to change colour.

Add the finely chopped tomatoes to the kadai and cook until they soften and become mushy, forming a thick sauce.

Increase the heat to high and add the chicken pieces to the tomato mixture. Stir well to coat the chicken with the sauce.

Cook the chicken on high heat for a few minutes, then reduce the heat to medium. Cover the kadai and cook, stirring occasionally, until the chicken is tender and cooked through.

When the chicken is cooked, remove the lid and increase the heat to evaporate any excess liquid and thicken the sauce if desired.
