Ingredients:
- 1 ½ pounds skin-on, bone-in chicken thighs
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup plus 1 tablespoon Dijon mustard, divided
- 1 medium yellow onion, sliced
- 3/4 cup white wine
- 3/4 cup chicken stock
- 1/3 cup heavy cream
- 1 large bay leaf
- 5 sprigs fresh thyme
Preparation:
Season the chicken legs with kosher salt and ground black pepper.
Heat the olive oil and butter in a large frying pan over medium heat.
Add the chicken thighs, skin side down, and cook until the skin is golden and crisp.
Turn the chicken and cook until the other side is browned.
Remove the thighs from the pan and set aside.
In the same frying pan, add the sliced onion and cook until soft and translucent.
Stir in 1/4 cup Dijon mustard, white wine, chicken stock, heavy cream, bay leaf and thyme sprigs. Bring to the boil.
Return the chicken thighs to the pan and nestle them in the sauce.
Cover the pan and simmer for about 20 minutes or until the chicken is cooked through.
Before serving, drizzle the remaining 1 tablespoon Dijon mustard over the chicken thighs.
