This recipe is a great way to enjoy the flavour of traditional buffalo wings, but with a healthier twist. Cauliflower is low in calories and packed with nutrients, making it a great choice for a healthy meal. Don’t be put off by the list of ingredients. This recipe is fairly straightforward and doesn’t require any complex cooking techniques. Plus, the satisfaction of making your own wings at home is unbeatable!
Ingredients:
- 1 tbsp sweet smoked paprika
- ½ tbsp ground cumin
- 1 tsp garlic powder
- 100g plain flour
- 200ml buttermilk or kefir
- 1 head of cauliflower (500g), broken into florets
- 80g hot sauce
- 1½ tbsp maple syrup
- 1 tablespoon butter
- Celery sticks, to serve
For the ranch dip:
- 100g Greek yoghurt
- 3 tbsp mayonnaise
- 2 tbsp chopped chives
- 1-2 tablespoons milk
Method of preparation:
Preheat the oven to 200°C (180°C fan) mark 6.
In a large bowl, mix together the paprika, cumin, garlic powder and flour.
Gradually whisk in the buttermilk until you have a smooth batter.
Add the cauliflower florets to the bowl and toss until they’re completely coated in the batter.
Place the florets on a baking tray and bake for 20-25 minutes, or until golden and crisp.
While the cauliflower is baking, combine the hot sauce, maple syrup and butter in a saucepan over a low heat. Stir until the butter has melted and the sauce is well combined.
When the cauliflower is done, remove from the oven and gently toss in the hot sauce mixture.
Return the cauliflower to the tray and bake for a further 10-15 minutes or until the sauce has thickened.
While the cauliflower is baking for the second time, make the ranch dip. Mix together the Greek yoghurt, mayonnaise, chives and enough milk to achieve the desired consistency.
Serve the buffalo cauliflower wings with the ranch dip and celery sticks on the side.
