Broccoli and Cheese Quiche

Ingredients:

  • 1 frozen pie shell
  • 4 large eggs
  • 3/4 cup whole milk
  • 1/4 cup heavy cream
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup broccoli florets
  • 1 scallion
  • 4 oz. shredded sharp cheddar cheese (about 1 cup)

Preparation:

Preheat the oven to 375°F (190°C). Place the frozen pie crust on a baking sheet to catch any spills.

In a large bowl, whisk together the eggs, milk, cream, salt and black pepper.

Steam the broccoli florets until just tender, then chop into small pieces. Thinly slice the spring onion.

Spread the broccoli, spring onion and grated cheese evenly over the base of the cake tin.

Pour the egg mixture over the vegetables and cheese.

Bake the quiche for 35-40 minutes, until the centre is set and the top is lightly browned. Leave to cool for a few minutes before slicing and serving.
