Brioche French Toast
This recipe is an invitation to indulge in a little luxury right at your breakfast table. It’s simple enough for a weekday treat, yet elegant enough for a weekend get-together. So why not treat yourself and your loved ones to a delicious morning feast?
Ingredients:
- 4 eggs
- 200ml single cream
- ½ tsp vanilla seed paste
- 1 tbsp golden caster sugar
- 4 thick, generous slices or 8 thin slices of day-old brioche
- 25g butter, for frying
- 1 tbsp vegetable oil, to fry
- 12 rashers of bacon
- 2 bananas, sliced
- Maple syrup, to serve
Method of preparation:
In a shallow dish, whisk together the eggs, single cream, vanilla extract and golden caster sugar until well combined.
Heat the butter and vegetable oil in a large frying pan over a medium heat.
Dip each brioche slice into the egg mixture, making sure both sides are well coated.
Fry the brioche slices in batches, turning once, until golden brown and cooked through.
In another frying pan, fry the bacon rashers until crisp.
Serve the French toast hot with the crispy bacon, sliced bananas and a generous drizzle of maple syrup.
