A perfect combination of freshness and spice, this dish is ideal for a quick and satisfying snack or light lunch. It’s a simple yet tasty way to enjoy the flavour of Mexico in the palm of your hand!


  • 3 (6oz) cans of canned chicken, drained
  • 1 tablespoon coriander, finely chopped
  • ½ teaspoon chilli powder, or more to taste
  • 3 avocados, halved lengthwise and pitted
  • 1 teaspoon lime juice, or more to taste

Method of preparation:

In a bowl, mix together the drained tinned chicken, finely chopped coriander and chilli powder.

Arrange the avocado halves on a serving platter and brush with lime juice to prevent browning.

Spoon the chicken mixture into the avocado halves, spreading evenly.

Serve immediately, garnished with extra coriander or chilli powder if desired.
