Delicious sweet grilled chicken.
Ingredients
- 300 g chicken fillets (2 small)
- salt and pepper
- 2 teaspoons chili flakes (or 1/2 teaspoon of cayenne pepper powder)
- 1 teaspoon sweet paprika powder
- 1 tablespoon rosemary leaves + extra for garnish
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lime juice and 1 teaspoon grated lime zest
Balsamic Strawberry Sauce
- 5 tablespoons balsamic vinegar
- 2 tablespoons honey or agave syrup
- 2 teaspoons lime juice
- 1.5 tablespoons extra virgin olive oil
- salt and pepper
- 1 cup chopped strawberries
Salad
- a handful of arugula with feta and vinaigrette dressing
Preparation
Rinse and pat dry the chicken fillets, season with salt and pepper, and place in a deep plate. Add chili flakes, paprika, rosemary, olive oil, lime juice, and zest. Mix well, coat the chicken thoroughly, and refrigerate for about an hour (can be marinated longer).
In a bowl, combine all ingredients for the sauce and mix well. Add chopped strawberries and mix again. This can be prepared ahead of time.
Heat a grill pan over medium heat. Place the chicken fillets with marinade onto the grill and cook for 4 minutes, then flip to the other side (chicken should have grill marks) and cook for another 3.5 minutes.
Reduce heat to low, cover the chicken loosely with aluminum foil, and let it rest covered for about 2 minutes.
Remove the foil and pour the strawberry sauce over the chicken. Let it sit for half a minute off the heat. Garnish with fresh rosemary before serving. Serve with arugula salad with feta cheese and vinaigrette.
