Millet Pudding with Summer Fruits

A delicious and healthy breakfast idea, perfect for convincing kids and those who aren’t fond of millet.

Ingredients

  • 1/2 cup millet
  • 2 cups milk (cow’s milk or plant-based such as coconut or almond)
  • 1 banana
  • 1/2 tablespoon honey or 1 tablespoon maple syrup
  • Summer fruits for serving, e.g., raspberries, blueberries, strawberries
  • Raspberry syrup

Instructions

  1. Rinse the millet under warm water using a sieve. Place it in a saucepan, add one cup of milk, and cook over low heat, covered, for about 15 minutes until the millet absorbs all the liquid.
  2. Transfer the cooked millet to a blender, add the peeled banana, honey or maple syrup, and the second cup of milk. Blend until smooth to create a creamy pudding.
  3. Divide the pudding into deep bowls, add the summer fruits on top, and drizzle with raspberry syrup.
