Ingredients
- 125 ml natural yogurt
- 2 eggs
- 125 ml vegetable oil
- 16 g vanilla sugar
- 150 g sugar
- 250 g all-purpose flour
- 1 tablespoon cocoa powder
- 1 teaspoon ground cinnamon
- 20 g gingerbread spice mix
- 2 teaspoons baking powder
- 0.5 teaspoon baking soda
- 2 apples (1.5 cups grated)
Topping
- 2/3 cup peeled walnuts
- 2 tablespoons cane sugar or regular sugar
- 1 teaspoon cinnamon
Preparation
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Line a small loaf pan (11 x 25 cm) with parchment paper.
- In a bowl, combine yogurt, eggs, vegetable oil, vanilla sugar, and sugar. Mix with a whisk until well combined.
- In another bowl, sift together flour, cocoa powder, cinnamon, gingerbread spice mix, baking powder, and baking soda. Mix well.
- Peel and grate the apples using a coarse grater. You should have approximately 1.5 cups.
- Combine all ingredients: wet ingredients, dry ingredients, and grated apples. Stir slowly with a spoon until just combined (do not overmix!).
- Pour the batter into the prepared loaf pan, smoothing the top.
- Sprinkle the top with roughly chopped walnuts, followed by cane sugar and cinnamon.
- Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
