Fig and Ricotta Sandwich with pine nuts and lemon-vanilla honey
Ingredients
Sandwich with Fig and Ricotta:
- 100 g ricotta cheese (homemade quick version from THIS RECIPE or store-bought)
- 2 fresh figs, sliced
- 3 tablespoons pine nuts
- good quality bread
- butter for spreading
Lemon-Vanilla Honey:
- 2 tablespoons honey
- 1 tablespoon lemon juice
- a pinch of lemon zest (optional)
- seeds from 1/2 vanilla bean
Preparation
In a small bowl, mix honey with lemon juice and vanilla. Lightly toast the pine nuts in a pan.
Spread butter on the bread slices (you can toast them in a toaster), then spread ricotta on top. Arrange fig slices and sprinkle with pine nuts.
Drizzle with lemon-vanilla honey.
