Homemade Almond Milk

Homemade Almond Milk

Almond milk is not as high in calories as it may seem. It reduces appetite, does not contain saturated fats, but has healthy fats, fiber, and omega fatty acids. It is often recommended in healthy and weight loss diets. You can buy ready-made almond milk (in eco stores, in the health food section in large stores, online) or make your own using the recipe below.

Ingredients

  • Raw unpeeled almonds 2
  • cups Cold water 4 cups

Preparation

Soak the almonds in a large amount of cold water overnight or for about 12 hours. Soaking almonds in water softens the skin and makes it much easier for the body to digest. Drain the soaked almonds, place them in a blender or food processor, add 4 cups of cold water, and blend thoroughly. Strain through a sieve lined with cheesecloth, wrap the cheesecloth, and squeeze out all the liquid. The obtained milk can be stored in the refrigerator for up to 3 days. If necessary, dilute with water.

Almond Butter

Ingredients

  • Raw unpeeled almonds 2 cups

Preparation

Roast the almonds in a large dry skillet, stirring occasionally, until lightly browned. Pour into a mini food processor or chopper or a large food processor and blend, occasionally scraping the almonds from the sides of the container, for a total of at least 10 minutes. After this time, the almonds will begin to soften, release oil, and acquire a creamy consistency that allows the butter to be spread on, for example, bread.
