Start your day with a high-protein, low-carb boost that’s both satisfying and nutritious. The combination of cheddar cheese, scallions and optional bacon packs a punch of flavour that will wake up your palate. These biscuits are great on the go, as a quick breakfast or even as a savoury snack at any time of the day.
Ingredients:
- 1 1/2 cups almond flour
- 3 large eggs
- 1 cup grated cheddar cheese
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- black pepper, to taste
- 1 spring onion, chopped
- 3 strips bacon, cooked and crumbled (optional)
Preparation:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the almond flour, baking powder, salt and a pinch of black pepper.
Beat the eggs in a separate bowl and add to the dry ingredients.
Stir in the grated cheddar and chopped spring onion until well combined.
If you’re using bacon, fold in the cooked and crumbled pieces.
Form the mixture into small balls and place on the prepared baking tray. Flatten each ball slightly to form a biscuit shape.
Bake for 12-15 minutes or until the edges are golden brown and the biscuits have set.
Leave the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
