Experience the joy of barbecuing without the meat with this recipe for vegetarian ribs. Made with gluten and flavoured with a smoky homemade barbecue sauce, these ribs are a treat for vegetarians and meat lovers alike.
Ingredients:
- 2 cups gluten
- ⅓ cup nutritional yeast
- 2 tablespoons paprika
- 1 tablespoon salt
- 2 cups water
- ½ cup smooth peanut butter
- 1 large onion, chopped
- ½ cup olive oil
- 2 cups barbecue sauce
Method of preparation:
In a large bowl, combine the gluten, nutritional yeast, paprika and salt.
In another bowl, whisk together the water and smooth peanut butter until well combined.
Gradually add the peanut butter mixture to the dry ingredients, stirring until a dough forms.
Knead the dough for about 5 minutes, then leave to rest for 15 minutes.
Preheat the oven to 175°C (350°F) and line a baking sheet with baking paper.
Roll out the dough into a rectangle about 1/2 inch thick, then cut into ribbed strips.
Place the strips on the prepared baking tray and bake for 25 minutes.
While the ribs are baking, fry the chopped onion in the olive oil until soft and translucent.
Add the barbecue sauce to the onions and simmer for about 10 minutes.
When the ribs are cooked, brush generously with the barbecue sauce and return to the oven for a further 10-15 minutes, or until the sauce is bubbling and starting to caramelise.
