Strawberry No-Bake Cheesecake with Strawberry Mousse

Prepare a delightful no-bake cheesecake with strawberry mousse, using cottage cheese and whipping cream.


  • 600 g strawberries
  • 100 g powdered sugar
  • 2 tablespoons lemon juice
  • 20 g powdered gelatin (2 tablespoons)
  • 250 g heavy cream (36% or 30% fat content, well chilled)
  • 500 g cottage cheese
  • 200 g ladyfinger biscuits (like those used for tiramisu)

For Decoration:

  • 250 g heavy cream (36% or 30% fat content, well chilled)
  • 4 tablespoons powdered sugar
  • fresh strawberries


Blend strawberries into a puree using a blender, then strain through a sieve into a clean bowl to remove seeds. Mix the puree with half of the powdered sugar (50 g).

In a small saucepan, combine lemon juice with about half a cup of strawberry puree, mix and heat until warm. Remove from heat, add powdered gelatin, and stir until completely dissolved. Finally, combine with the remaining strawberry puree.

Whip the cold heavy cream with the remaining half of powdered sugar (50 g) until stiff peaks form. Mix in the cottage cheese until well combined.

Prepare a 23 cm diameter springform pan. Arrange the ladyfinger biscuits halves with the sugared side facing outward.

Add the cheese mixture to the strawberry mousse in 3 batches, mixing gently after each addition until fully incorporated.

Pour the mixture into the prepared pan and refrigerate until set, for several hours.

Decorate with whipped cream sweetened with powdered sugar and fresh strawberry halves.
