Ingredients:
- nonstick cooking spray
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup orange juice
- zest of 1 large orange
- 1 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/8 tsp allspice (optional)
- 1/2 teaspoon salt
- 1 cup fresh cranberries, roughly chopped (heaped)
- 1/2 cup finely chopped walnuts
Method of preparation:
Preheat the oven to 350°F (175°C).
Spray a 9×5 inch loaf pan with nonstick cooking spray.
In a large bowl, cream together the softened butter, granulated sugar and brown sugar until light and fluffy.
Whisk in the vanilla extract.
Beat in the eggs one at a time.
Stir in the sour cream, orange juice and orange zest.
In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, pimento (if using) and salt.
Gradually add the dry ingredients to the wet, stirring just until combined.
Gently fold in the chopped cranberries and walnuts.
Pour the mixture into the prepared loaf tin.
Bake for 60-75 minutes or until a toothpick inserted in the centre comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
