Coconut Burfi Brownie Bites

Coconut Burfi Brownie Bites are an exquisite fusion dessert that combines the rich, fudgy texture of brownies with the sweet, aromatic flavours of coconut burfi, a traditional Indian sweet. These bite-sized treats are perfect for satisfying sweet cravings and are ideal for serving at parties, potlucks or simply as a special treat to enjoy at home.

Ingredients:

For the brownie base:

  • 1/2 cup unsalted butter, melted, plus extra for the pan
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

For the coconut burfi topping:

  • 3 cups unsweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 large egg
  • 1/4 teaspoon kosher salt
  • 1 teaspoon ground cardamom

For decoration:

  • 4 ounces dark chocolate, melted

Method of cooking:

Preheat the oven to 175°C (350°F). Grease a mini muffin tin or brownie bites pan with melted butter.

In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder and 1/4 teaspoon kosher salt.

In a separate large bowl, whisk together the melted butter, granulated sugar and brown sugar.

Add the eggs and vanilla extract to the butter/sugar mixture and whisk until smooth.

Gradually add the dry ingredients to the wet, beating until just combined. Do not overmix.

Spoon the brownie mixture into the prepared mini muffin cups, filling each cup about halfway.

In a medium bowl, combine the shredded coconut, sweetened condensed milk, 1 large egg, 1/4 teaspoon kosher salt and ground cardamom. Mix until well combined.

Spoon a small amount of the coconut mixture onto each brownie batter-filled cup and press down gently.

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the centre comes out clean and the coconut topping is golden brown.

Remove from the oven and allow the brownie bites to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Once the Brownie Bites have cooled, drizzle the melted dark chocolate over the top for an extra touch of decadence.
