Chocolate Brownie Cake

Ingredients:

  • 100g butter
  • 125g caster sugar
  • 75g soft brown or muscovado sugar
  • 125g dark or milk chocolate
  • 1 tablespoon golden syrup
  • 2 eggs, beaten
  • 1 tsp vanilla extract/essence
  • 100g plain flour
  • ½ tsp baking powder
  • 2 tablespoons cocoa powder

Method of preparation:

Preheat the oven to 180°C (350°F). Grease and line an 8-inch square baking tin with baking paper.

Melt the butter, dark chocolate and golden syrup in a heatproof bowl set over a pan of simmering water. Stir until smooth and well combined.

Remove from the heat and leave to cool slightly. Add the caster sugar, light brown sugar and vanilla extract and mix well.

Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.

Sift the flour, baking powder and cocoa powder together and fold into the chocolate mixture until just combined.

Pour the mixture into the prepared tin and smooth the top with a spatula.

Bake for 25-30 minutes or until a toothpick inserted in the centre comes out with moist crumbs. Be careful not to overbake as this will dry out the brownies.

Allow the cake to cool in the tin before cutting into squares.
