Ingredients:
- 1lb bacon, diced
- 1 medium onion, chopped
- 9 eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, defrosted
- 2 cups grated cheddar cheese
- 1 1/2 cups small curd cheese
- 1 1/4 cups grated Swiss cheese
Method of preparation:
Preheat the oven to 350 degrees F (175 degrees C).
In a skillet, cook the bacon and onion until the bacon is crisp; drain.
In a large bowl, combine the eggs, hash browns, cheddar, cottage and Swiss cheeses.
Stir in the bacon and onion mixture.
Pour into a greased 9×13 inch baking dish.
Bake uncovered for 35-40 minutes or until a knife inserted in the centre comes out clean.
