Asian Lime Dressing

You can use this dressing on a variety of dishes, from salads to marinades for proteins or even as a zesty dipping sauce. It’s sure to become a staple in your kitchen. Fresh ingredients like ginger and garlic not only add flavour, but also offer health benefits, including anti-inflammatory properties and a boost to the immune system.

Ingredients:

  • 1/3 cup freshly squeezed lime juice
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 tsp fish sauce
  • 1 piece fresh ginger (1″ diameter x 1″ long, peeled and minced)
  • 2 cloves of garlic (peeled and minced)
  • 2/3 cup grape seed oil (or olive oil)
  • 1 shallot (peeled and quartered)
  • 1 teaspoon crushed red pepper

Method of preparation:

Combine the flavours: In a blender, combine the lime juice, soy sauce, rice wine vinegar, sesame oil, honey, fish sauce, minced ginger, minced garlic and crushed red pepper.

Blend: Pulse until ingredients are well combined.

Add the oil: With the blender running on low speed, slowly add the grapeseed or olive oil until the mixture is emulsified and smooth.

Finish with the shallots: Add the quartered shallot to the blender and pulse a few times to incorporate it into the dressing without completely pureeing it, which will add a nice texture and flavour.

Adjust the seasoning: Taste the dressing and adjust the seasoning with more soy sauce, honey or lime juice if needed.

Serve or store: Use the dressing immediately or store in an airtight container in the fridge for up to a week.
