Cauliflower nuggets are cauliflower florets fried or baked with spices, served with yogurt and pomegranate. A delicious and healthy snack!
Ingredients
- Cauliflower, 1/2 head
- Pomegranate, 1/4
- Natural yogurt, 180 g
- Extra virgin olive oil
- Kebab-gyros spice mix or garam masala, 1.5 tablespoons, plus a pinch of hot paprika, salt, and pepper
- Coriander or parsley
Preparation
Boil water in a large pot and add salt. Cut the cauliflower into medium-sized florets. Add them to the boiling water and cook until al dente, about 6-7 minutes. Drain.
Meanwhile, remove the seeds from the pomegranate: first, cut off the top and bottom, then make vertical cuts around the pomegranate, breaking it apart and extracting the seeds.
Place the spices on a plate and coat the cooked cauliflower in them. Drizzle with 1 tablespoon of extra virgin olive oil and mix. Season with ground pepper and salt.
Heat a pan, add a little olive oil, and briefly fry the cauliflower on each side. You can also use a grill pan, air fryer, or oven grill.
Spread the yogurt on a plate, using about 3 tablespoons. Add the cauliflower, sprinkle with pomegranate seeds, and garnish with coriander or parsley.
