Ingredients
- Feta cheese: 200 g
- Sour cream (18%): 200 g
- Olive oil: 40 g
- Lemon juice: 2 tablespoons
- Spring onion: 1
- Cucumber: 1
- Fresh mint: 1 handful
- Honey: 1 tablespoon
- Salt
- Black pepper
Preparation
Step 1: Prepare the Whipped Feta
- Place the feta cheese in a bowl and add the sour cream and half of the olive oil.
- Blend the mixture with a hand blender until it becomes a smooth, creamy consistency.
- Spread the whipped feta onto a serving platter.
Step 2: Prepare the Cucumber Salsa
- Cut the cucumber into quarters and remove the seeds. Dice each piece into small cubes and place them in a bowl.
- Finely chop the spring onion and fresh mint, then add them to the bowl with the cucumber.
- Season with salt and black pepper, then drizzle with the remaining olive oil and honey. Mix everything together well.
- Spoon the cucumber salsa over the whipped feta on the serving platter.
